菜茶与高香茶品种拼配工艺对小白茶风味品质的提升作用

        Enhancing effect of blending local tea with high-aroma cultivars on the flavor quality of small white tea

          目的 为解决漳墩菜茶作为单一原料制作小白茶时存在的风味层次感不足、产量不稳定等问题,开展“原料筛选—比例优化—品质评价”一体化的小白茶拼配工艺研究,以期提升小白茶综合品质。
          方法 以漳墩菜茶为基料,配入‘梅占’‘金牡丹’‘黄玫瑰’等3个特色高香型茶品种制作小白茶,设置5种不同拼配比例,分析制成小白茶的感官和理化指标,筛选最优小白茶拼配工艺。
          结果 对比5种不同拼配比例的小白茶综合品质,选出处理组2(漳墩菜茶60%、‘梅占’20%、‘金牡丹’10%、‘黄玫瑰’10%),高于其他处理组且优于单一原料小白茶。拼配出兼具多重优势的小白茶新产品,该产品以漳墩菜茶的兰香清甜为主基调,同时融合了梅占的花果香、金牡丹的蜜香及黄玫瑰的馥郁香,有效弥补了单一原料的不足,形成具有复合花蜜果香型的小白茶。
          结论 本研究构建的漳墩菜茶与高香型品种茶拼配工艺体系,核心内容包括原料标准、拼配比例、关键工艺参数和综合评价方法,为漳墩菜茶拼配产品的开发提供技术支撑。

           

          Abstract:
          Objective To address issues such as insufficient flavor layering and unstable yield when Zhangdun local tea is used as a single raw material for making small white tea, this study conducts an integrated research on the blending process of small white tea, which covers " raw material screening - ratio optimization - quality evaluation". The aim is to improve the comprehensive quality of small white tea.
          Method Taking Zhangdun local tea as the base material, three characteristic high-aroma tea cultivars including 'Meizhan', 'Jinmudan' and 'Huangmeigui' were added to produce small white tea. Five different blending ratios were set, and the sensory and physicochemical indexes of the prepared small white tea were analyzed to screen out the optimal blending process for small white tea.
          Result By comparing the comprehensive quality of white tea samples with five different blending ratios, Group 2 treatment (60% Zhangdun local tea, 20% 'Meizhan', 10% 'Jinmudan', 10% 'Huangmeigui') was selected. Its quality was not only higher than that of the other treatment groups, but also superior to white tea made from a single raw material. This study successfully developed a new small white tea product with multiple advantages: taking the orchid fragrance and fresh sweetness of Zhangdun local tea as the main tone, it simultaneously integrated the floral and fruity fragrance of 'Meizhan', the honey fragrance of 'Jinmudan', and the rich fragrance of 'Huangmeigui'. This effectively made up for the shortcomings of single raw material, and finally formed a white tea product with a compound floral, honey and fruity fragrance.
          Conclusion The blending process system for Zhangdun local tea and high-aroma tea cultivars constructed in this study has four core components: raw material standards, blending ratios, key process parameters, and comprehensive evaluation methods. This system provided technical support for the development of blended products using Zhangdun local tea.
